A former Subway restaurant in Copiague, near Lindenhurst, is getting a new lease on life.
Sometime this winter, the space will transform into the third location of Clay Oven, a Long Island chain that serves creative twists on traditional Pakistani and Indian dishes.
Restaurants often use Flyers to let current patrons know of their expansion plans and to give people an idea of the menu. Customers will find many of Clay Oven's popular dishes on the menu at the newest location. Those dishes include Bombay Bowls - an Indian twist on a naked burrito bowl, tandoori chicken wings, and pakora cheese sticks.
Lubna Habibi, who owns Clay Oven, signed a lease for the newest outpost at the beginning of November. An opening date has not been set yet, but Habibi is hoping for January.
Along with signing a lease and getting ready to open a new restaurant, Habibi is currently appearing in the second season of Feed Me TV. She is an engineer by training, but decided to change careers and focus on cooking. The creative takes on traditional dishes South Asian dishes has earned her numerous positive reviews, including a spot on Newsday's Top 100 restaurants list.
When it opens, the newest Clay Oven will have seating for 30. The food will be prepared in an open kitchen, so that customers can watch as their food is cooked. True to its name, the restaurant will have a tandoor, or clay oven, on site. The tandoor is traditionally used to cook meats and breads at a very hot (900 degrees) temperature.
