New eatery finally open in Lancaster

Although the process took much longer than he anticipated, Joe Casillas opened his restaurant, Rome 116, last month.

The new eatery takes over the Spaghetti Shop space in Ety Road NW in Lancaster. Casillas had planned to open in April, but work on the fire suppression system and the oven venting hood system caused a substantial delay.

Casillas, however, found a way to work around the problem. He says he had planned to carry out some bathroom remodeling after he had been open for a year, but decided to go ahead and use the downtime to get the work finished.

The restaurant has experienced some employee turnover, but the staff has begun to settle in with 18 employees. Rome 116 did not have a formal opening, but Casillas says business thus far has been good.

Casillas previously worked in the restaurant business, but got into engineering. However, he says he always loved cooking even when he was away from the kitchen, and hoped to have a place of his own. Casillas wants to give people a second chance, so he provides training and skills they can use in life.

The restaurant is open from 11:00 am to 10:00 pm Tuesday-Saturday for the time being. Establishments like this can benefit by distributing custom Pens to new customers as a thank you for stopping in.
